You dont have to worry about honor all the time and you can just Rob people. I personally don't like low honor playthroughs, but I think the best compromise, and most likely canon story, is low honor up until chapter 6. id say the more canon approach is just going from low honor gradually up to high honor. arthur starts questioning the whole

In settings, you can turn the symbol off (sound will be too). You won't be able to get rid of the big honor bar though. Honour is tied to dialogue in missions, so removing it wouldn’t be advisable. Be a bad outlaw.. the honor system never stopped you. It literally doesn't affect the gameplay..
